This is a quick and healthy stir-fry which makes an ideal mid-week supper. You can add a pound of ground beef, pork or turkey. Kids love this dish! If you can find the pouches of ready-cooked quinoa, then this dish becomes even quicker. Otherwise, cook the quinoa in advance.

INGREDIENTS
1 tablespoon sesame oil
3 garlic cloves, sliced
1 teaspoon fresh ginger, grated
1 tablespoon Taste #5 Vegetarian Far Eastern paste
1 cup of pre-cooked quinoa (l like to use a mix of red and white)
1 cup broccoli
4 spring onions (scallions)
1/2 teaspoon chili flakes or 1 fresh chili (seeded and chopped)
2 tablespoons ‘nam pla’ fish sauce
1 tablespoon honey
juice of 1 lime
Kosher Salt and freshly ground pepper
TO SERVE
Generous handful of fresh cilantro, finely chopped
Finely grated zest of one lime
Lime wedges
METHOD
- Heat the sesame oil in a large non-stick pan, add garlic, ginger and umami paste
- When sizzling, add the quinoa and broccoli and stir-fry until broccoli is tender
- Add spring onions, chili, fish sauce, honey and lime juice and stir-fry until bubbling
- Reduce heat and simmer for another minute to ensure broccoli is tender
- Serve topped with a sprinkling of chopped cilantro, grated lime zest and lime wedge
