I like to cut the chicken tenders into smaller pieces for children and then they can help put the Bomba XX paste, mozzarella and parmesan mixture on top of the chicken before it goes into the oven. You can easily double this recipe or more for a fast, simple weeknight meal.

INGREDIENTS

2       boneless, skinless chicken breasts, cut into long strips about 1/2" thick
4       tablespoons of Bomba! XXX
6       slices of mozzarella cheese
1       tablespoon grated parmesan cheese
1       tablespoon breadcrumbs, panko work best
         Kosher salt and freshly ground black pepper to taste
         Olive Oil

METHOD

  1. Preheat oven to 350˚F.
  2. Heat some oil in a large skillet on medium-high heat and cook the chicken strips until lightly golden on each side but not totally cooked through.
  3. Season with a little salt and pepper. Spread each tender with a little Bomba XXX, top with a piece of mozzarella and place in a baking dish.
  4. Mix parmesan and breadcrumbs together and sprinkle over tender.
  5. Drizzle with olive oil and bake in the oven for around another 5-10 minutes until the chicken cooked through and the cheese has melted.

SERVING SUGGESTIONS

Garnish with finely chopped parsley.

Cook white long grain rice as directed substituting chicken stock for water. Just before serving stir in a tablespoon of butter, add 1/2 teaspoon of grated lemon zest, 1/4 grated parmesan and a grind of fresh black pepper. A quick and easy, almost risotto that is citrusy and a wonderful accompaniment.
