Technically this mix is enough to make 4 burgers. That said, if I am in the mood for a burger, I confess to wanting a big one, so really this recipe only makes me 2-3 burgers! I guess it depends on how hungry you are ...

INGREDIENTS
1 small red onion, finely chopped
1 pound, lean ground beef
1 egg yolk
bunch of flat-leaf parsley, finely chopped
3 tablespoons Umami Bomb
Kosher salt and freshly ground black pepper
METHOD
- Place all the ingredients in a large bowl and thoroughly mix together
- Season with salt and pepper and shape into burgers or meatballs
- Chill before cooking your preferred way
NOTE: Once the burgers are cooked, you can add further umami flavour by serving on top of a Portobello Mushroom instead of a bun – topping with bacon, parmesan or pecorino cheese and umami ketchup. Umami ketchup is easily made by mixing 1 part Taste #5 Umami Bomb paste with two parts tomato ketchup.
