RECIPE
LAURA's DREAMY RISOTTO
INGREDIENTS
100g/3.5oz butter (cubed)
1 onion (finely chopped)
320g/11oz arborio rice
1 glass of white wine
85g/1 cup Parmesan cheese (finely grated)
METHOD
Mix the contents of this sachet in 1 liter of boiling water to make a stock.
In a heavy-based saucepan, sauté the onion in 40g/1.5oz butter on a medium heat until soft.
Add rice and coat well until transparent.
Add the wine and stir until evaporated.
Add a ladleful of hot stock and simmer until it has evaporated. As the stock is absorbed add more stock when necessary, stirring all the time with a wooden spoon. Continue until you have added all the stock (approximately 18-20 minutes) and the rice is soft and tender but the grains are still firm in the center.
Remove from the heat and stir in the remaining butter and Parmesan. Serve immediately.
