I love this completely cheesy,  umami-rich dip recipe on crackers, with crudité and especially in a grilled-cheese sandwich with bacon! This recipe is our Taste#5, lightened-up version of the signature pimento cheese from *Stinky Bklyn*, a wonderful cheese shop located in Brooklyn, New York.
