I discovered this truly alchemical dish by pure chance. I simply dressed some steamed purple sprouting broccoli with olive oil and freshly squeezed lemon juice and then went to answer the telephone. When I came back there was a fuschia moat around these bright green stems. A simple kitchen miracle performed in a moment.
Serves 4
INGREDIENTS
1 pound purple sprouting broccoli
extra virgin olive oil
juice of 1 lemon
flaky finishing salt and freshly ground black pepper
METHOD
Steam the broccoli until bright and just tender
I prefer it still just a little al dente, but cook to your taste.
Drain and dress immediately with olive oil, freshly squeezed lemon juice, salt and pepper.
TASTY TRANSFORMATIONS
Apply this recipe to any other vegetables you fancy (please note you will not get the pink effect). Try boiled potatoes dressed while still hot with plenty of olive oil, a couple of halved garlic cloves, salt and pepper, and a handful of chopped flat-leaf parsley. Mix well and serve with grilled fish or other simple grilled meats.
