I named this Harcore Punk Version because this is the pesto I make when I am inspired by the Bestie Boy's song "I Want Some." Music to me is as inspirational as food.
INGREDIENTS
1/2 cup olive oil
2 heads of garlic, each clove peeled and thinly sliced
2 whole chilies, thinly sliced (for really hot, add some chili flakes too)
flaky salt and freshly ground pepper
small handful of fresh basil leaves, chopped
small handful of fresh mint leaves, chopped
large handful of flat-leaf parsley, chopped
grated zest of 2 lemons
grated Parmesan or Pecorino Romano cheese, to serve
METHOD
Heat oil in large frying pan. Add the garlic and chili, and a light sprinkling of salt flakes.
Cook over low heat to allow garlic to flavor the oil. Remove from the heat when the garlic begins to color and slightly puff, taking care not to burn it; otherwise it will taste bitter.
Drain the spaghetti and add to the pan. Toss with the chopped herbs, lemon zest, and ground black pepper; if a little dry, add more oil.
Serve immediately with the grated cheese.
VARIATION
Three chopped anchovies can be added to the garli-chili mix in the frying pan for extra umami!
