Using my Far Eastern recipe Umami Paste here, really gives this tartare a delicious twist. This is great served with prawn crackers, melba toast or as it is with a simple green salad.
Serves 4 as a starter
INGREDIENTS
1 x 450g (8oz) boneless salmon fillet, skinless, cut into very small chunks
¼ of a cucumber, finely diced
1 lime, juice and zest
1½ teaspoons fresh chives, very finely chopped
1½ teaspoons fresh coriander (cilantro), very finely chopped
1½ teaspoons sesame oil
½ shallot, very finely chopped
1 teaspoon soy sauce
1 teaspoon Taste #5 Umami Paste Vegetarian Far Eastern Recipe
½ teaspoon peeled fresh ginger, minced
Sea salt and freshly ground black pepper
Method
- Combine all the ingredients in a mixing bowl, gently folding together.
- Season to taste, but be aware this probably won’t need much salt.
