Flavored butters are a simple way to jazz up any dish. I like to add many different flavors and textures. This Bomba! XXX butter is probably the simplest I make but, by no means, the least attractive, especially on the whitish pink meat of a lobster. It works fantastically well with all shellfish, especially crab and scallops.
These also freeze really well so it is worth making a large quantity when you do find the time then you can just cut into discs and save for next time.

INGREDIENTS
For the tomato butter
2 sticks of unsalted butter at room temperature
2-3 tablespoons of Taste5 Bomba! XXX Tomato Paste[ BUY NOW ]
2 tablespoons flat leaf parsley, finely chopped (you can do half/half with basil for a change)
Kosher salt and pepper
This versatile tomato butter works very well on seafood, particularly shellfish like crab, lobster or scallops. Here we've decided to use lobster as it's in season.
FOR THE LOBSTER
2 whole lobster tails
Kosher salt
Ground white pepper
Method
- Make the butter in advance. In a bowl, cream the butter with the Bomba and the parsley until well combined, season to taste. Roll into a sausage shape, wrap in plastic wrap and put in the fridge/freezer until you are ready to use.
- Preheat the broiler.
- Place lobster tails on a baking sheet. With a sharp knife or scissors carefully cut the top side of the lobster shells in half lengthways. Prise the 2 sides apart and season with salt and white pepper and a drizzle of olive oil.
- Place under the broiler for around 5-10 minutes until they are lightly browned and the meat goes opaque. When they are nearly ready put a disc of Bomba butter over each half and return to under the broiler until the butter has almost melted.
- Serve with lemon wedges and some crusty bread to mop up the delicious juices.
