I like this marinade best with seafood, especially prawns cooked on the BBQ, but it also works really well with steak, chicken and tofu cubes. The process of marinading means the flavors really penetrate the prawns, tenderizing and ‘flavorizing’ them before cooking.
Enough for 500g large prawns, peeled and deveined
INGREDIENTS
4 tablespoons olive oil
3 tablespoons Bomba! XXX
juice of ½ lemon
1 clove garlic, crushed
1 teaspoons fresh or dried oregano
½ red chilli, finely chopped (optional)
Method
- Combine all the ingredients and pour into a large freezer bag with the prawns.
- Rub all over and place in fridge for 1-2 hours. These are great threaded onto skewers to make juicy prawn kebabs.
TOP TIP: Put any excess marinade in a small pan and reduce to make a delicious umami-packed sauce.
