This salad could be made with any grains or mix of grains; spelt, brown rice etc. I like to use a ready-cooked pack of grains that you can just tip into the pan there and then, but of course you could use dried and cook them in advance if you prefer.
Serves 2 as a side dish
INGREDIENTS
250g (9oz) pre-cooked lentils/quinoa mix
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
2 teaspoons Taste #5 Umami Bomb
1 apple, chopped into small cubes
½ red onion, finely chopped
handful of mint, finely chopped
Method
- Pour the lentil mix into a large bowl and combine with the olive oil and vinegar. Give this a good stir to break up the lentils and quinoa and make sure they have a good coating of oil and vinegar.
- Now add the Umami Bomb and give it all another good stir to disperse the paste evenly.
- Finely add the apple, red onion and mint and give a final stir through.
