This is my favorite way with salmon and we usually have it at least once a week at home. Take care not to overdo the maple syrup (very tempting, I know) as the dish loses something if it is too sweet. This method also works very well with chicken thighs and even roasting vegetables.

INGREDIENTS
60ml (¼ cup) maple syrup
1 generous teaspoon Taste #5 Umami Paste Vegetarian Far Eastern
1 tablespoon soy sauce
1 garlic clove, crushed
pinch ground ginger
sea salt and freshly ground black pepper
2 salmon fillets
Method
- In a small bowl, mix together the maple syrup, umami paste, soy sauce, garlic and ginger, and season to taste with salt and pepper.
- Place the salmon fillets in an ovenproof dish and coat them on all sides with the mixture. If time permits, cover with cling film (saran wrap) and leave to marinate in the refrigerator 30-60 minutes.
- When ready to cook, preheat the oven to 200°C (400°F). Cook the salmon in the ovenproof dish, uncovered, for around 15-30 minutes, until its center is cooked through.
