This is a staple meal in our household. It is quick and easy for me to make after a long, busy day at work and the children love it. It is also so versatile - any type of mince would work here – beef, lamb, pork, turkey… I often use quinoa instead of rice but you can use any grain, and there are lots of different vegetables you can add – broccoli, mushrooms, carrots… Whatever you fancy! It goes without saying that I like to add a teaspoon of Taste #5 Umami Bomb to this mixture for extra deliciousness and often just add whatever frozen veg I have in the freezer, like a handful of peas!
Serves 2 adults & 4 children
Ingredients
2 tablespoons olive oil
½ yellow onion, cut into strips
1 clove garlic, sliced
1 pound minced beef
Kosher salt and pepper
4 tablespoons Bomba! XXX
4 cups of cooked rice, brown or white
1 cup green beans
1 cup frozen green peas
1 cup canned sweetcorn
Method
- Heat the oil in a large skillet over a medium heat.
- Add the onion and garlic and cook for 2-3 minutes until softened.
- Add the mince and stir fry until browned then stir in the Bomba with a splash of water from the kettle.
- Season with salt and pepper then add the cooked rice and vegetables of your choice. Cook for another 5-10 minutes, stirring continuously to ensure everything is cooked.
