FAST DINNER IDEA #36. A delicious vegetarian entree or side dish bursting with the flavours of olives, capers and a touch of heat! Serve with a simple green salad and you have dinner in under 30 minutes.
SERVES 1-2
INGREDIENTS
1 package Taste#5 SUGO Perfect Puttanesca Sauce
2 tablespoons olive oil
1 eggplant, thinly sliced
1 tablespoon, minced fresh parsley
1/4 cup pitted & sliced black olives
freshly grated parmesan cheese
kosher salt and freshly ground pepper
METHOD
- Preheat oven to broil (500 F˚)
- Brush eggplant slices with olive oil, season lightly with kosher salt and freshly ground pepper
- Broil eggplant slices in a single layer until just cooked 3-7 minutes
- Remove from oven and spread Taste#5 Sugo Perfect Puttanesca sauce evenly across each piece of eggplant followed by a sprinkling of chopped olive and grated parmesan over each slice
- Return to broiler for 3-5 minutes until bubbly and cheese is melted
- Remove from oven and garnish with chopped parsley
