This is a delicious dish for summer. The umami paste really brings out the sweetness of the langoustines. Serve this with a simple green salad and some crusty bread for a light summer lunch. Thanks to my great friend Chef Nobu Matshisa for creating this recipe.
You can easily substitute spot prawns, jumbo shrimp or spiny lobster if you can't find fresh langoustines.

Serves 2 as a starter
INGREDIENTS
6 langoustines
6 teaspoons Taste #5 Umami Bomb
2 tablespoons sake
1 tablespoons soy sauce
Method
- Preheat a hot grill (broiler).
- Cut the langoustines in half, down their length.
- Rub the tails with the Taste #5 Umami Bomb.
- Place in a heatproof dish and pour the sake and soy sauce over them.
- Grill for 3-5 minutes until cooked
