The ideal accompaniment to grilled meat/fish or simply a bag of tortilla chips and a few cold beers! If you can make the salsa a few hours in advance so the flavors have time to amalgamate together.

INGREDIENTS
2 cups whole tomatoes, chopped (skins & seeds included)
1 tablespoon Bomba! XXX
½ red onion finely chopped
a handful of chopped basil leaves
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice or balsamic vinegar
Kosher salt and freshly ground black pepper
Method
- Chop all the ingredients to small, fingernail-sized cubes and mix together well. Season to taste.
