Italian mushy peas with bacon! Indescribably delicious!
INGREDIENTS
olive oil
3 ounces pancette, diced
1 onion, thinly sliced
two 7-ounce cans of petit pois, drained and rinsed
(try to get the one in water, salt and sugar)
sprig of fresh mint, torn
salt flakes and freshly ground black pepper
METHOD
Heat a glug of oil in a large frying pan
Sauté the pancetta
When cooked through, add the onion slices
Sauté the onion until it begins to color and the pancetta is crisp
Add the peas and mint
Season with salt and pepper
Cover and continue to cook over low heat for a couple of minutes
