INGREDIENTS
2 pounds roasting potatoes, peeled and cut into 1-inch pieces
3 ounces Parmesan cheese, grated
5 ounces proscuitto di Parma slices
1/2 ounce fresh sage or rosemary
olive oil
salt flakes and freshly ground black pepper
METHOD
Preheat the oven to 245˚F
Place the potatoes in salted boiling water and reduce the heat to a simmer, cover, and par-cook for 5-8 minutes until the outer edges are fluffy
Toss the potatoes in the grated Parmesan
Roll each potato in proscuitto
Place potatoes in roasting pan with your chosen herb
Drizzle with olive oil and season with salt and lots of black pepper
Roast until crisp and golden
NOTE: If you think your life is too short to wrap a potato, the proscuitto can just roughly chopped and strewn over the top of the cheesy potatoes and herbs
