This is the ultimate liquid lunch. You can serve this in either bowls or glasses depending on the setting. It also makes a great canapé when served up in shot glasses.

INGREDIENTS
6 cups tomato juice
1 tablespoon Bomba! XXX
2 cups cherry tomatoes
1 red capsicum, halved and deseeded
1 yellow capsicum, halved and deseeded
½ cucumber, roughly chopped
¼ red onion, roughly chopped
2 garlic cloves
2 pieces rye crispbread
large handful ice cubes
1 tablespoon extra virgin olive oil
1 tablespoon red/white wine vinegar
1 teaspoon sumac
handful fresh mint leaves, finely chopped
Kosher salt & freshly ground black pepper
Method
- Place all the ingredients except the mint, salt and pepper in a food processor or blender and blitz until smooth.
- Stir in the mint and add the seasoning according to taste.
- Serve in glasses or bowls.
