Crostini, simply translated, means little toasts and these are perfect for a light lunch, summer starter or even a canapé if you use smaller slices of bread from a baguette for example. The bright red of the Bomba contrasts with the white of the ricotta and the vibrant green of the basil – all the colors of the Italian flag on your plate. If you are in a real hurry, you can cut to the chase and leave out rubbing with the garlic and just top with a drizzle of olive oil instead.
Serves 4 as a light lunch
INGREDIENTS
8 slices of bread, sourdough/baguette – slightly stale works best
1 clove garlic
extra virgin olive oil
8 tablespoons Bomba! XXX tomato paste
7oz ricotta cheese
8 basil leaves
freshly ground black pepper
Method
- Pre-heat your grill to high. Rub each slice of bread with the garlic clove and drizzle with olive oil. Toast each slice of bread on both sides until golden.
- Spread on 1 tablespoon Bomba per slice of bread. Top with ricotta, a basil leaf and a grinding of black pepper.
