Technically this mix is enough to make 4 burgers. That said, if I am in the mood for a burger I confess to wanting a big one so really this mix only makes me 2-3 burgers! I guess it depends on how hungry you are…
Serves 4
INGREDIENTS
1 small red onion, finely chopped
18oz lean minced beef
1 egg yolk
bunch of flat-leaf parsley, finely chopped
3 tablespoon Umami Bomb
Kosher salt and freshly ground black pepper
Method
- Put the onion, mince, egg yolk, parsley and Umami Bomb in a large bowl and give it a really good mix. The best way to do this is to use clean hands!
- Season with salt and pepper and shape into burgers or meatballs.
- Chill before cooking in your preferred way.
NOTE: Once you burgers are cooked you can add further umami magic by serving on top of a Portobello mushroom (instead of a bread bun) – and topping with bacon, Parmesan or pecorino cheese and umami ketchup (easily made by mixing 1 part Taste #5 Umami Bomb to 2 parts tomato ketchup)
