As summer tomatoes will soon be gone, you should stir up several batches of this classic sauce. The addition of Bomba! XXX to this sauce really brings out the sweetness of the tomatoes. Use as a base for pizzas, stirred through pasta and served on the side of meat or fish. This sauce also freezes well so make a double batch. You can then freeze half, ready to pull out at a later date when you’re struggling for time. We like to use the pliable silicone muffin pan, and fill each with about 1 cup of sauce. Once frozen, remove to a resealable plastic freezer bag in just the right portions for future cooking. We also love to do this with homemade stocks and sofrrito.
Serves 6
INGREDIENTS
1 yellow onion, quartered
1 carrot, quartered
1 celery stalk, quartered
3 garlic cloves
2 tablespoons olive oil
2 tablespoons Bomba! XXX
2 pounds fresh, chopped tomatoes or 2 – 14oz cans of chopped tomatoes
large handful of basil leaves
kosher salt and freshly ground black pepper
Method
- Pulse the onion, carrots, celery and garlic in a food processor until everything is chopped to the size of small red lentils.
- Heat the oil in a large pan, add the vegetables, and sauté in the oil until the onion becomes translucent.
- Add the Bomba, tomatoes, basil and salt and pepper.
- Cook over a low heat, stirring, for 15 minutes.
