This blend is sensational with meats and ribs
INGREDIENTS
1/2 ounce 100% cacao dark chocolate
1 teaspoon dried chili flakes
2 long strips orange zest
1/2 teaspoon Mexican cacao powder
METHOD
Dry the orange zest in a barely warm oven, until thoroughly dry and crisp
Be careful not to burn the zest or it will become very bitter
Blend all the ingredients
DRY RUB – Coarsely mill the ingredients
STARDUST - Use a coffee grinder to yield a fine powder of tasty sprinkles
