This almost magic umami-packed powder is easy to make and perfect for anything savory. Once you've made your first batch, you will find yourself making it often. Sprinkle a little over salads or steamed vegetables with a splash of oil and lemon juice.
INGREDIENTS
1 jar or tin of salted anchovies in oil
METHOD
Preheat an oven to 215˚F
Drain anchovies and place evenly spaced on a baking tray
Place tray in the oven
Reduce heat to 175˚F
Bake anchovies for about an hour until dried
Continue to bake longer if still damp
Grind dried anchovies to a powder using a mortal and pestle or coffee / spice grinder
Place anchovy powder in a clean, dry jar
Powder will keep for several days in the refrigerator
