Dry Rubs
Coarsely mill the following mixtures to create flavorful rubs ideal for roasting or grilling meats and robust fish and shellfish.
Wet Rubs
Much coarser than dry rubs, these are for grilling and roasting where you want to give the meat, poultry or fish a crust that can be brushed off to serve.
Using a mortar and pestle, coarsely grind the ingredients with olive oil, garlic and a handful of fresh herbs depending on the flavor profile you want to create.
VARIATION For extra flavor and the juice and zest of an orange, lemon or lime can be added to your mixture. A splash of spirits such as tequila, vodka, grappa, gin or brandy can will also impart flavor and enhance the herbs and spices.
