Makes 4 pizzas
INGREDIENTS
Pizza Dough (store bought will do) - enough for four 9-10" pizzas
1 cup Classic Tomato Sauce or Taste #5 Bomba!XXX Tomato paste
8 ounces of fresh mozzarella, thinly sliced
1/4 cup extra-virgin olive oil
24 fresh basil leaves
flaky salt
METHOD
Preheat a grill for indirect heat.
Using your lightly-floured hands or a rolling pin, stretch or roll out four 9- to 10-inch rounds. They do not need to be perfectly round.
Carefully lay one pizza over the hottest part of the grill.
Cook for about 2 minutes until bottom is lightly browned.
Using tongs, gently lift up the pizza and flip it over.
Cook for just 30 seconds.
Remove to a baking sheet with the less cooked side up.
Repeat with the remaining 4 rounds of dough.
Allow all to cool for 10 10-15 minutes.
Using a ladle, pour 1/4 cup of the tomato sauce. Use the ladle to spread the sauce roughly across the dough to within 1/2-inch of the edges.
Evenly distribute the mozzarella across the pizzas.
Cook pizza one at a time on the cooler side of the grill until bottoms are crisp and the mozzarella has melted.
Remove pizza and drizzle a little olive oil over the pizza and strew the basil leaves over each pizza. Give a good sprinkle of flaky salt. Cut and serve hot!
