At first you might be startled by the matching of chicken, grapes and cashews but they work excellently together in this dish. They also work together beautifully in a salad not unlike my Coronation Chicken recipe. It is best not to cook the grapes too much otherwise they will lose all their juices.
Serves 4
INGREDIENTS
80g (3oz) unsalted butter
1 large onion, finely chopped
4 boneless skinless chicken thighs, sliced into bite-size pieces
1 tablespoon Taste #5 Umami Vegetarian Paste
200g (7oz) large green seedless grapes, halved
splash of dry white wine
200g (7oz) unsalted cashew nuts
sea salt and freshly ground black pepper
Method
- Melt the butter in a pan on a medium heat and fry sauté the onion until soft and golden.
- Add the chicken and fry until cooked through.
- Add the umami paste and grapes and stir together. Splash in the wine and turn the heat up until all the alcohol has evaporated, stirring gently.
- Add the cashew nuts and season to taste.
